Quick, Easy & Healthy Lunch Hacks Perfect For Those Busy Days

I want to let you in on a little secret. Ready? I am the WORST, absolute worst at meal prepping. It is a non-existent lifestyle in my book, but everyone and their mother on Instagram seem to be meal-prepping royalty. Have you seen this new trend about organized refrigerators? I’ve seen a whole bunch of “meal prep fridges” on social media and, I swear, if organized refrigerators become a trend I’m giving up on all things because no way can I compete with that kind of level of house care.

Back to my original thought; meal prepping is an art in itself. Although It’s not my particular medium, I am surrounded by it. I asked a lot of my meal-prepping friends how they accomplish such an adult like task. Time is a real set back for me on this whole concept. I lack to prep healthy meals, so throughout the week, I’m constantly trying to figure out what I want to consume. Here’s what I found out about how to make healthy lunches (and other meals) quickly.

Cook like you are coking for a reunion

One of the best hacks for making healthy food is also one of the most straightforward - cook in bulk. When you have the time to cook, don’t make one meal, make time to prepare a larger batch and cook in bulk. That way, you can portion your large batch of whatever you’ve made up, and you have healthy meals in the fridge or freezer. Whether you’re making a salad, pasta, or even a roast, you can quickly bulk cook and make extra for the week’s lunches.

Get yourself an Airfryer

Take advantage of this kitchen appliance the gods have blessed us with. If you’re lucky enough to have an Airfryer, it’s essential that you take the time to use it. They are an ideal way to make (healthy) food quickly considering you don’t need any oil or butter. Don’t have an Airfryer? Now could be the perfect time to invest in one of these fantastic machines. You can make anything and everything in them, from tempura cauliflower to meatball sliders.

Fish are friends and food

If you fancy making yourself a fresh lunch that’s quick, easy and healthy, fish is a great option. This is because most fish cooks relatively quickly, and goes with a range of healthy sides, like salad, veggies, and noodles. Plus, you can cook fish in a plethora of kitchenware. Try a copper skillet, a George Foreman or a BBQ grill, and it cooks within a few minutes. Throw some olive oil, salt, pepper, lemon juice, and chili onto your tuna or salmon, and it will taste amazing.

Swap pasta for rice and veggies

A new trend has been sweeping the country of swapping carbs like pasta and rice for vegetable alternatives. Spaghetti squash, say what? Instead of having pasta with your lunch zucchini spirals are just as filling. Instead of having rice, perhaps you could have cauliflower rice? They taste the same if you ask me. Cutting carbs? Try sweet potato bread instead. There are so many options available to choose from.

Take advantage of these on your busy days to feel like you have your life together. One small step for me, one giant leap for meal-preppers everywhere.
